Chili pepper: subtle warmth meets the sea
Calabrian cuisine is often associated with intense, palate-scorching heat—the kind of spice that leaves little room for subtle flavors. We take a different approach. In our kitchen, chili pepper isn’t here to steal the spotlight; it acts as a subtle, elegant partner. We use it to impart a gentle touch of warmth that elevates the natural freshness of our seafood without ever masking it. Even in our most delicate dishes, local diavolicchio chili lingers gracefully in the background, enhancing every subtle nuance of the sea.

A bit further south, the air fills with the perfume of bergamot and local citron—extraordinary citrus varieties we use to marinate our raw amberjack carpaccio, adding a bright, aromatic acidity that cleanses the palate with every bite.
Calabria’s rich maritime legacy inspires us daily. The Strait of Messina and the Tyrrhenian shore have long been home to historic swordfish hunting and a deep reverence for the daily catch—traditions we celebrate in our main courses. Yet one dish on our menu serves as a true bridge across time, taking you back two thousand years: the Obsonium Taureanum.
To understand this dish, we look to Taureana, an ancient Roman settlement perched on the cliffs of Palmi, right where CapoSperone Resort and Ristorante Ulisse stand today. The ancient Romans revered seafood, artfully pairing sweet, sour, and savory notes with wild herbs and garum (their famed fermented fish seasoning). In Latin, obsonium denoted a prized fish dish—the ultimate noble meal. We have recreated this historic delicacy for modern palates, keeping its ancient soul firmly intact.
